🍅 Chorizo Apple Tomato Soup

Diving straight into my latest kitchen adventure – I used what I had in my kitchen, and came up with a soup that’s a little off the beaten path: Chorizo Apple Tomato Soup. Sounds unusual, right? But trust me, it’s a cozy bowl of deliciousness that’s perfect for shaking up your soup routine.

Ingredients:

  • 1/2 cup diced Chorizo
  • 1 medium Apple, peeled and diced
  • 1/2 cup Arugula, roughly chopped
  • 2 cups Chicken Stock
  • 1 cup Water
  • 1 teaspoon Vegeta Seasoning (or any all-purpose seasoning)
  • 1/2 cup diced Parsnip
  • 1/4 cup finely chopped Onions
  • 2 cloves Garlic, minced
  • 1/2 cup diced Carrot
  • 1 teaspoon Thyme (fresh or dried)
  • 1 teaspoon Rosemary (fresh or dried)
  • 1 teaspoon Basil (fresh or dried)
  • 1 tablespoon Lard or Butter
  • Freshly ground Black Peppercorn, to taste

Cooking Instructions:

  1. In a large pot, sauté onions and garlic in lard or butter over medium heat until golden.
  2. Add the chorizo and cook until slightly browned.
  3. Stir in the carrots, parsnips, and arugula, cooking for 3-4 minutes until they start to soften.
  4. Pour in the chicken stock and water, bringing the mixture to a gentle boil.
  5. Add the diced apples along with thyme, rosemary, and basil. Simmer for 20-25 minutes.
  6. Adjust the seasoning with Vegeta, salt, and black pepper. Serve hot and enjoy!
