🍙 Why I Follow a Minimalist Japanese Diet

I never thought that a typical afterschool bite to eat at five guy’s burgers would change how I lived the rest of my life; this was the first time I ever went into anaphylactic shock with a newfound peanut allergy. Shortly after, I unexpectedly started having allergies to almost everything.

😨 What is happening

We couldn’t figure out what was happening for a few years until I visited a doctor who suggested I had food allergies and that we run a thorough allergy test. The results came back with almost six pages of items that I could be allergic to, both food and non-food items, including animal household items, etc. More than half of the items on the list were positive, with varying degrees of how allergic I was to each item.

Starting to feel devastated and unsure of what I could eat, my Doctor, Who was Chinese, suggested that I explore more Asian foods alongside short-term regular acupuncture. This would help with the bloating and discomfort until I figured out a diet well for me. This advice changed my life.

🌏Figuring it out

I explored over the years many dishes from Korea, Thailand, India, China, and the Philippines. Unfortunately, like Caribbean food, many recipes from these areas are quite heavy on spices, making me feel worse. Recipes rich in spices, acids, pork, corn, gluten, and wheat make my stomach feel like a wolverine is trying to claw his way out of my body.

🇯🇵 The Japanese way

After much trial and error, I concluded that following a Japanese diet would be the best if I wanted to live without constant bloating, pain, discomfort, and fatigue. Generally Japanese food is based on rice, noodles, and sauces. And regarding deserts, most have ingredients that can easily be substituted with gluten, corn, and dairy-free alternatives.
